Couscous is one of the quickest and easiest side dishes to make, which makes it perfect for the busy working mum. Couscous can literally be prepared in five minutes. It is low fat and the whole wheat version (which is the only type I buy) is packed with fibre. Children love it and it makes a great change from rice or potatoes.

Here is my simple tip for making ordinary instant couscous taste delicious. Simply follow the instructions on the package. My magic ingredient is to add crushed, toasted pine nuts.

Step One: Take a tablespoon or two of raw pine nuts and toast them in a pan. I just put them right in one of my saute pans and heat them until they turn a nice, light brown colour.
